Vegetarian Cabbage Stir-Fry

Ingredients
1 head of cabbage, chopped
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
2 cups of broccoli, chopped
1 cup of extra firm tofu, cubed
1/4 cup of soy sauce
2 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of ground ginger
1 teaspoon of red pepper flakes (optional)
6 cups of cooked rice
Instructions
. In a large skillet, heat the olive oil over medium-high heat.
. Add the minced garlic and ground ginger, and cook for 1-2 minutes until fragrant.
. Add the tofu and stir-fry for 5 minutes, until lightly browned.
. Add the chopped cabbage and bell peppers, and stir-fry for another 5 minutes.
. Stir in the chopped broccoli and soy sauce, and cook for an additional 3-4 minutes.
. Sprinkle with red pepper flakes (optional), and stir to incorporate.
. Remove from heat and serve the stir-fry over a bed of rice.
