This refreshing vegan stir fry is packed with nutrients and flavor. Using zucchini noodles instead of traditional pasta makes it a guilt-free meal!

Ingredients
1 large zucchini, spiralized
1 red bell pepper, thinly sliced
1 cup sliced mushrooms
1 small yellow onion, chopped
1 tablespoon olive oil
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground ginger
1/4 cup cashews, chopped
Salt and pepper, to taste
Instructions
. Heat olive oil in a large skillet over medium heat.
. Add in sliced mushrooms, bell pepper, and onion. Cook until vegetables are soft, about 5 minutes.
. Stir in soy sauce, garlic powder, onion powder, and ginger.
. Add in spiralized zucchini noodles and cook for an additional 3-4 minutes.
. Season with salt and pepper to taste.
. Remove from heat and top with chopped cashews.
. Serve hot and enjoy!
