Ingredients

  • 1 large zucchini, spiralized
  • 1 red bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 1 small yellow onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 1/4 cup cashews, chopped
  • Salt and pepper, to taste

Instructions

  1. . Heat olive oil in a large skillet over medium heat.
  2. . Add in sliced mushrooms, bell pepper, and onion. Cook until vegetables are soft, about 5 minutes.
  3. . Stir in soy sauce, garlic powder, onion powder, and ginger.
  4. . Add in spiralized zucchini noodles and cook for an additional 3-4 minutes.
  5. . Season with salt and pepper to taste.
  6. . Remove from heat and top with chopped cashews.
