1 whole chicken (4 pounds)
2 lemons
4 cloves of garlic
1/4 cup olive oil
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 teaspoons salt
1 teaspoon black pepper
Instructions
. Preheat the oven to 375°F (190°C).
. Rinse the chicken and pat it dry with paper towels.
. Slice one lemon and set the slices aside.
. Cut the other lemon in half and squeeze the juice into a small bowl.
. Finely chop the garlic and add it to the lemon juice, along with the olive oil, rosemary, thyme, salt, and pepper. Mix well.
. Place the chicken in a roasting pan and rub the lemon herb mixture all over the chicken, making sure to coat it evenly. Place the reserved lemon slices on top of the chicken.
. Roast the chicken for 1 hour and 20 minutes, or until it is cooked through and has reached an internal temperature of 165°F (74°C).
