Ingredients

  • 1 whole chicken (4 pounds)
  • 2 lemons
  • 4 cloves of garlic
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. . Preheat the oven to 375°F (190°C).
  2. . Rinse the chicken and pat it dry with paper towels.
  3. . Slice one lemon and set the slices aside.
  4. . Cut the other lemon in half and squeeze the juice into a small bowl.
  5. . Finely chop the garlic and add it to the lemon juice, along with the olive oil, rosemary, thyme, salt, and pepper. Mix well.
  6. . Place the chicken in a roasting pan and rub the lemon herb mixture all over the chicken, making sure to coat it evenly. Place the reserved lemon slices on top of the chicken.
  7. . Roast the chicken for 1 hour and 20 minutes, or until it is cooked through and has reached an internal temperature of 165°F (74°C).
  8. . Let the chicken rest for 10 minutes before carving and serving.
