Ingredients
1lb beef steak
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tbsp garlic powder
4 potatoes, peeled and cubed
1/4 cup butter
1/4 cup milk
1 head of broccoli, chopped
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tbsp balsamic vinegar
Instructions
. Preheat grill to 400°F (200°C).
. Rub steak with olive oil and season with salt, pepper, and garlic powder.
. Place steak on grill and cook for 5 minutes on each side for medium-rare.
. While steak is cooking, place potatoes in a pot of boiling water and cook for 15-20 minutes, until tender.
. Drain potatoes and mash with butter, milk, and a pinch of salt and pepper.
. In a separate pan, sauté broccoli and bell peppers with olive oil until slightly charred.
. Drizzle balsamic vinegar over the vegetables and continue to cook for an additional 2 minutes.
. Remove steak from grill and let rest for 5 minutes before slicing.
. Serve sliced steak with mashed potatoes and roasted vegetables on the side.
