Ingredients

  • 1lb beef steak
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 4 potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 head of broccoli, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 tbsp balsamic vinegar

Instructions

  1. . Preheat grill to 400°F (200°C).
  2. . Rub steak with olive oil and season with salt, pepper, and garlic powder.
  3. . Place steak on grill and cook for 5 minutes on each side for medium-rare.
  4. . While steak is cooking, place potatoes in a pot of boiling water and cook for 15-20 minutes, until tender.
  5. . Drain potatoes and mash with butter, milk, and a pinch of salt and pepper.
  6. . In a separate pan, sauté broccoli and bell peppers with olive oil until slightly charred.
  7. . Drizzle balsamic vinegar over the vegetables and continue to cook for an additional 2 minutes.
  8. . Remove steak from grill and let rest for 5 minutes before slicing.
  9. . Serve sliced steak with mashed potatoes and roasted vegetables on the side.
