Vegetarian Cabbage Stir-Fry

Ingredients

  • 1 head of cabbage, chopped
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups of broccoli, chopped
  • 1 cup of extra firm tofu, cubed
  • 1/4 cup of soy sauce
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground ginger
  • 1 teaspoon of red pepper flakes (optional)
  • 6 cups of cooked rice

Instructions

  1. . In a large skillet, heat the olive oil over medium-high heat.
  2. . Add the minced garlic and ground ginger, and cook for 1-2 minutes until fragrant.
  3. . Add the tofu and stir-fry for 5 minutes, until lightly browned.
  4. . Add the chopped cabbage and bell peppers, and stir-fry for another 5 minutes.
  5. . Stir in the chopped broccoli and soy sauce, and cook for an additional 3-4 minutes.
  6. . Sprinkle with red pepper flakes (optional), and stir to incorporate.
  7. . Remove from heat and serve the stir-fry over a bed of rice.
